VB^ and those damn vegetables

Hi Folks-

So I am incredibly full and very tired. I was looking up a dressing earlier (Asian style dressing) and looked it up on our web page, uncommonmarket.net. I have to say, what a great search engine, there’s a little box that says search this web page and it has been very helpful for me finding recipes ;-).

I had to laugh, when I found the recipe it was included in a “new diet, just eat your damn vegetables” post. The reason I was looking for it was because Peter and I are on our semi annual effort to eat better food. This diet also could be summed up by “eat your damn vegetables.” It has the more official designation of “Eat Vegan before 6,” by the well known Mark Bittman. It’s a fascinating read and he points out the many ecological benefits to Vegan before 6. Basically until dinner you are a vegan. At dinner you may eat what you choose, meat, dairy, white bread, pasta and rice are all considered treats that you can have at dinner, but he encourages you to use them sparingly. Junk food is just that so you are really discouraged from eating that, but still occasionally if that’s what you got to have, that’s what you have.

Day one, following the variation suggested for a cook( there are others like the “all American” “the restaurant diner” Cook for a family” etc.) I Shopped, bought a ton of produce and came home and made veg stock, bulk chick peas, and rice. Chopped salad veggies for a week, washed and stored romaine, kale and chard, made two kind of dressing, a roasted garlic bean dip and cooked a vegetable heavy frittata for dinner, along with a lovely salad. Hopefully all of this is supposed to make my week easier but right now I’m just tired. I’ll keep you up to date.
