Turkeys and red sauce

Hi Folks-

Two things… First thing, we have turkeys, you need to order by Thursday (5:00pm), Vermont Stonewood Turkeys, $4.99 a pound in three pound increments, starting at 12 pounds, call us, we are ready to take your order!

Thing two, simple tomato sauce. I love this, it can be made quickly, it belongs in the time of year when tomatoes are not fresh and you can use it for lasagna, straight up, chicken parm, meatballs, with portabellas and polenta, whatever. Have you ever had a thick tomato sauce sandwich? With a little cheese, one of my faves :-).


¼ cup olive oil

4-5 cloves garlic, thinly sliced

½ to ¾ cup white onion, medium dice


pinch or red pepper flakes or cayenne

1 tsp oregano

Then add

2 – 28 cans diced tomatoes (I used one with garlic and basil)

1 tsp sugar, 1 tsp salt, ½ tsp black pepper, 1 TBL balsamic vinegar

Simmer for 30 to 40 minutes, which is really thick, go for less time if you want it looser. It is done and ready to do anything with! Take it off the heat and add a little cream and pasta, make lasagna, simmer the great meatballs we sell at the market (freezer), simmer a pork chop in it while it cooks, serve that; maybe just cook spaghetti for all your favorite people.
