Trout tomorrow with other great fish and a coule of quick recipes (wings anyone?)

Hi Folks-

This weather! How perfect! It’s like fall is starting a tiny bit early so the sleeping is good but the days are still fabulous. I would truly love a solid three months of this weather, here’s hoping.

Peter and I are back to working weekends for a bit so our weekend culinary endeavors tend to be either simplified or non-existent. Peter rocked it last night. We brought home chicken legs, cut the thighs off and froze them for some more ambitious evening but the kept the drumsticks out.

Below is the recipe we came up with for “chicken wings” and an internet recipe for ranch dressing, which was really good. The wings take a while to cook but prep time on both dishes was in the five minute range, super doable if nobody feels like cooking. If either one of us had a bit more energy I probably would have quartered some small zucchini, tossed them in salt, pepper and olive oil and thrown them on a sheet pan to bake while the chicken did, they would also be good dipped in the ranch dressing.

Chicken wings

3 TBL olive oil

3 cloves of garlic, smashed or minced

2 tsp chili powder

1 tsp garlic powder

Salt and pepper

2 TBL corn starch

10 chicken drumsticks

Preheat oven to 375. Cover a baking sheet with tin foil and place a raised rack over that. You’ll want the air to circulate underneath the chicken.

Place all ingredients except for chicken in a large plastic bag and mix thoroughly. Add chicken drumsticks and mix around until all are completely covered.

Place the chicken on the rack, set timer for one hour, half way through flip chicken pieces over. Serve hot.

Ranch Dressing

¼ cup mayo

¼ cup sour cream

¼ cup milk

Whisk together and then add

½ tsp dried dill

½ tsp dried parsley

½ tsp garlic powder

¼ onion powder

salt and pepper to taste

Finally, add 1 to 2 tsp of fresh lemon juice, also to taste. Refrigerate till chilled, will last up to one week in the fridge. If you’re feeling adventurous, crumble in some blue cheese.

Lastly, because we don’t feel like cooking, we are going to Peasant in Waitsfield, which has come highly recommended and is open on Monday nights. We’ll let you know!
