Hope everyone enjoyed the weekend, looks like we aren’t going to see that much sun again for a bit. I know we ate outdoors on Sunday and it was fabulous.
For the first outdoor meal almost everything was grilled. I tried a new recipe which was very good, grilled cauliflower. Slice the cauliflower head into ¾ inch slices vertically trying to keep it with bits of the stalk to hold it together (I was medium successful at this, but as long as the pieces are large enough not to fall through the grill I think you are okay). Brush slices/pieces with olive oil and sprinkle with spices:
- 2 teaspoons kosher salt
- 2 teaspoons ground turmeric
- 1 teaspoon crushed red pepper
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/2 teaspoon powdered ginger
- 1/2 teaspoon garlic powder
- 1/2 teaspoon freshly ground black pepper.
Grill over high heat to lightly char and then set aside on the grill, not over direct heat, while you grill the rest of dinner. My grill has a higher shelf in the back and that worked, turning off a burner would work, or just making sure it isn’t over the coal/fire. Took about ten minutes indirect time to soften to the perfect eating consistency. Try it, very tasty.
We are a full week plus a little into our 21 day Clean diet and it’s going pretty good. Basically no allergens (wheat, dairy, soy, alcohol, red meat, a bunch of other stuff) two smoothies a day and your one meal in the middle of the day (or as close as we can get it). Some supplements but a big emphasis on a twelve hour window at night of no food, which I have to believe is healthy.
It’s going pretty well, as always I am trying a bunch of new recipes. I’ve made a delicious shepherd’s pie with tons of veggies, lamb and cauliflower “mashed potatoes” (just steam cauliflower and then put in a food processor with a little milk (or almond milk), salt, pepper, a little coconut oil and some chopped chives, great skinny alternative to mashed potatoes that tastes good. So yes on the Shepherd’s pie, hard no on the avocado chocolate mousse (it was NOT just like mousse, it was just like chocolate flavored avocado) and a pretty distinct no on the “lasagna.” That was to be expected of a dairy free, tomato free, gluten free diet but I thought I’d try. The rice noodles weren’t bad, the sauteed mushrooms, spinach and onions were all great…the cashew cheese … not so much so. Anyway, I ‘m having fun with the food and we are both a bit perkier (well I am anyway 🙂 and a wee bit sleeker!
Soft Shell crabs are probably making their last appearance tomorrow, so if you’ve got the craving I suggest acting on it.
