Soft Shell deliciousness!

Hi Folks-

Hmmph. Snow. Yuck.

But spring really is here and I know because we have soft shell crabs coming in again! Here, once again is one of my favorite soft shell crab recipes, from Mark Bittman, Soft Shell Crabs with Pasta.

Soft shells are super easy to clean with a pair of kitchen scissors. Simply trim of the eyes and mouth from the front, flip over and trim off the abdominal flap, turn right side up again and lift the edge of the top shell on either side and trim off gills, you are ready to go. If you want another easy recipe crab recipe… simply mix a little flour with a touch of salt, pepper, garlic powder, onion powder; heat 2 TBL olive oil and 2 TBL butter in a pan, dredge the crabs lightly in flour mixture and fry til golden. Wonderful dipped in a little mayo mixed with basil and lemon.

Chelsea and I are headed to Boston on Wednesday for a Mother’s Day treat! Chels got us tickets to a Keb Mo concert and we decided to take an extra day for fun in Boston.
