Quick healthy recipes

Hi Folks-

Once again somebody complimented me today on what an amazing staff we have, how nice they are and you know, I couldn’t agree more! Thanks all of you!

2 quick parts of dinner tonight that were healthy and delicious. Blanched broccoli (4 minutes, drain) sauteed in olive oil with a minced clove of garlic, a ΒΌ tsp red pepper flakes, 3 anchovy fillets minced and then smooshed and a shot of soy sauce. Very flavorful!

Mock mashed potatoes; Steamed cauliflower head (the whole thing, chopped up) in a food processor with salt, pepper and 4 oz neufchatel (low fat cream cheese, frankly I can hardly tell the difference) and a little garlic powder. I could eat that every day.

Still no soft shells, sorry :-(. But Dover sole tomorrow vs gray or lemon so that’s fun.

Come eat on the porch, it gets direct sunlight at lunch. On a day like today, when it was sunny but not that warm, it was surprisingly nice out there.
