Quick dinner ideas and pre ordering for Valentine’s Day

Hi Folks-

So for our house, Super bowl was a success. I’m not much of a football fan (although who doesn’t love a good dip)but even to the die hards I watched it with I don’t think it went down as one of the more exciting super bowls, oh well.

Next holiday, Valentines Day! Do think about what you would like to pre-order for Valentines day or the Friday after, fish is a very popular option, it tends to go very fast!

Our prepared food cooler is overflowing with good stuff to eat. Jeanne did some cute little snack pack with cheeses, salami and olives that are great, I had one today for lunch, perfect really. There is mac and cheese, pulled pork, a vegetarian pasta bake, some lasagna, some excellent soups and more so pick a night and skip the cooking, makes a week night sooo much easier.

I was having week night-itis last week and brought home La Strada’s focaccia, fresh mozzarella and tomatoes. I cut the circle in half and warmed it in the oven, took it out and sliced that crosswise, opening up to layer thinly sliced fresh mozz on open faced and stuck in back in the oven for about 4 minutes. While the bread and cheese were warming I sliced the tomatoes fairly thin and really coated them with salt and pepper. When the cheese had melted slightly I took it out of the oven and layered on the cold salty/peppery tomatoes. It was absolutely delicious. Give it a try!
