Paella and soft shells

Hi Folks-

Well it isn’t Monday but the fish is coming in tomorrow so here we are. For those of you that ordered soft shells, they will be coming in tomorrow. For those of you that didn’t there will be six available in the morning until claimed :-)!

I did make paella this weekend and I have to say it was beautiful and tasty and will definitely be on the “having people to dinner” rotation! I used the grilling version from the New York times and will modify slightly next time, I thought it could use a bit acidity and so will substitute some white wine for some of the stock. Other than that, it takes a bit of prep; browning chicken and sausage, sauteing onions and garlic, heating the stock. Once you’ve done that though you truly feel like a magician. I can’t recommend a paella dish enough but a large cast iron skillet or even dutch oven would probably work.

Sweet Rowan, one of the dairies we work with has been bringing us new cheeses, different flavored cheddars. They are delicious and are down in the corner cooler door, try them out.

Fresh wild Salmon is not yet available here but should be soon.
