Killer Spaghetti Sauce and what’s cooking this week

Hi Folks-

So the Vegan Before 6 diet is proceeding apace. It’s actually not too bad, I find that I forget I can have animal products at night. I do usually remember but have several times just decided to work with what ever veggies I have and throw in a little cheese. It is hard to have left overs that you can’t have for lunch so that’s tricky. Also, some days, like today, you get busy, I didn’t have breakfast or lunch and now at four I really don’t want to snack on vegetables.

Oh well I’ll figure it out. I did make a fabulous spaghetti sauce this weekend, starting with carrots, celery, onion, garlic, red bell peppers and mushrooms sauteed in olive oil, added a little oregano and salt and pepper. Meanwhile, I had a bunch of cherry tomatoes and a couple of large ones getting wonky so I roasted them for about a half hour and added them along with a can of diced tomatoes. Let everything simmer for an hour, stirred in a half cup of freshly chopped basil, served over whole wheat pasta and was very happy. (It was after six so I did add a little Parmesan :-).

Still no soft shells, they are saying around Mother’s Day. We will keep trying to get them until we do.

I’ve had a request for a rolled stuffed pork loin that I usually make just at Christmas but I’m happy to for Easter as well, anytime really with some notice. Basically the pork loin is butterflied and stuffed with a mixture of dried apricots, Gruyere and pine nuts and then rolled back together and tied. If you’d like one, let me know by Wednesday for Saturday and I’ll make you one, $11.99 a pound.

Halibut again tomorrow yay! And I think that will be my non vegan treat this week!!
