I love scallops

Hi Folks-

Sharon is training with a recently hired front of the house person tonight so I’m left to my own resources. I accomplished cooking and eating dinner with an embarrassment of ease. There were some large beautiful sea scallops left in the fish case from being delivered Friday, so I took about ¾ of a pound of them home. The rest will come out of the case tonight, if it isn’t sold, to make room for the new scallops that are arriving tomorrow. Though I felt a little decadent eating the scallops all by myself, it wasn’t enough to dissuade me from doing it. I simply sauteed them in olive oil over medium high heat, being careful not to overcook them. Normally I would have used a combination of butter and olive oil but just today Sharon and I started the Clean Diet which doesn’t allow dairy of any kind. The scallops were perfect – low calorie and so splendidly good. I don’t know what I’d do if I didn’t own a grocery store.

Sharon and I did the Clean Diet about four months ago and we lost a lot of weight, and though we haven’t gained any weight back we’d like to lose quite a bit more so hopefully the diet will give us the jump start we need.
