Fried Chicken

Hi Folks-

Well it’s been a couple of weeks since I have gotten a post together to send out. Sometimes a little vaca is just the thing.

One of the things I have been doing is working on frying chicken. Summer time is my time to fry because you can cook outdoors and the cleanup is a piece of cake.

I did my usual chat with family, internet research and cook book diving. Peter and Alec said they had the best chicken ever at the Saratoga race track, so I tracked that recipe down (Hatties, Bobby Flay actually did a whole episode on it). Chelsea had a favorite chicken tender spot in NH at a Pub and I got that recipe too. They are famous for it. I got the recipe from their chef and it started with 8.5 pounds of cornflakes, did a little bit of scaling on that one. And for the wrap up it was raining one day I wanted to fry chicken so I went with Betty Crocker’s oven fried chicken. I’ll share the others as we go along but that Betty Crocker was super easy, didn’t mess up my kitchen and was delicious.

ΒΌ cup flour, tsp of paprika, tsp of black pepper, 2 tsp of salt. 4 chicken legs, 4 tbls butter. Preheat the oven to 425, put the butter in a 9×13 pan and let melt in the oven. Mix the dry ingredients in a paper bag. When the butter is bubbling, shake the chicken in the paper bag, shake of the excess and place skin side down. Cook for 25 minutes and flip, cook 25 more and you have beautiful crispy fried chicken.
