flavor from Japan

Hi Folks-

Glorious summer! Spent the weekend with my daughter in the Champlain Islands, so beautiful and such a different piece of Vermont. Very hard to come back to work 🙂

Ate outdoors tonight and basically will until we can’t. Made a quick salad of cooked cold buckwheat noodles with chopped red pepper, grated carrot and cilantro. The dressing was 2 TBL of sesame oil, 2 TBL of rice wine vinegar, juice of one lime, a tsp of brown sugar and some minced garlic. Delicious and on the noodles I added Umeboshi, furikake, a new sprinkling seasoning that we picked up at the food show that is now in the deli. A savory blend of toasted sesame seeds, toasted nori, dried brined plum and dried brined shiso leaves, organic and vegan and as Sophia said “Oh Wow!” It was a great flavor boost and I could see it on plain noodles, in plain broth, on fish or grilled vegetables and yeah, straight off the spoon!

So we still don’t have access to Fresh King Salmon, through any of our distributors but hopefully soon. Time to get the grill out and start doing some fish outside.

Fish tomorrow:

  • Dayboat Haddock

  • Icelandic Arctic Char

  • Swordfish

  • Alaskan Cod. Frozen at sea

  • Shetland Salmon
