Easy Mexican Style chicken dinner

Hi Folks-

Okay Spring happened today, that was nice. Even if winter comes back, which it inevitably will, we are winning this year.

Made a delicious, crowd friendly dinner tonight in a snap. In a 2+ quart casserole pan put one cup of white rice, one can of rinsed black beans, one cup of frozen corn, one jar of salsa, one cup of chicken stock and the following seasoning: 1 tsp oregano, 1.5 tsp cayenne, 1/4 tsp pepper, 1/2 tsp salt. Mix well and put three raw chicken breasts on top (about 1.5 pounds total) cover with tin foil and cook at 350 for 60 minutes, take out uncover and coat with cheese, put back in the oven until cheese is melted. Done. Easy delicious and pretty nice left overs.

New yogurt at the store. Finally I’ve found a regular (not greek) yogurt that is delicious and well made. From prolific Jersey cows in Newbury VT it is full fat and protein laden. All of the flavors and fruits are from their farm. Check it out here at Green Mountain Yogurt,

A heart warming story with lots of community involvement, desperate steps and day saving tech students. Frankly the yogurt is so good it doesn’t need the back story but it always adds a little Flava…

Prepared food case is looking good with Misty Knoll Chicken dinners, the classic meatloaf and mashed, baked stuffed trout, salmon dip and all kinds of goodies. Check it out.
