Blue Cheese dressing!!

Hi Folks-

Sharon filling in for Peter here. He’s off to the races tomorrow with Alec and is catching up on some much needed sleep.

We had a decent dinner last night, grilled sword fish, grabbed a spinach salad from the market and had some reheated veggies. I was looking for something to make it spark a bit and thought “Oh, how about some homemade blue cheese dressing.” And yep that did it, so freaking good, a spin on Craig Claiborne’s blue cheese dressing…With basil!! Made enough for our salads and a little left over (but only because I put the lid on it and put it away, we were definitely going to finish it with spoons).

  • ½ cup mayonnaise

  • 1.5 Tbl spoons minced onion

  • 1 tsp minced garlic

  • ¼ cup minced basil

  • ¼ cup sour cream

  • 1 TBL lemon juice

  • 2 tsp rice wine vinegar

  • 3 to 4 ounces crumbled blue cheese

  • salt and pepper to taste

Shake it up baby and let chill before serving, if you serve this with chicken wings you will be famous forever. Also lovely with the classic wedge of ice burg lettuce and cherry tomatoes or you know, spinach salad:-)
