A simple white fish recipe

Hi Folks-

Happy Monday! We always have this weird little slow down when school starts until the tourists get here in earnest. Breakfast holds its own but lunch and dinner sales meander a little. So maybe start this school year with some fish!

Here’s a crowd pleasing white fish recipe, use cod or haddock, that the fussiest will like and brain food to boot!

A very simple very delicious white fish recipe.

1/3 to ½ pound cod or haddock per person

2 TB butter per person, divided

1 to two sleeves of ritz crackers

2-3 tsp dry mustard

Juice of one lemon

Lightly butter a baking dish with some of the butter. Preheat oven to 350. Layer the cod or haddock in pan making it as even a thickness as possible. Using your hands squeeze the ritz crackers in the package until they are crumbs, coast the fish with an even layer of crumbs. Melt whatever butter you have left, mix with lemon juice and dry mustard (more or less to taste). Drizzle this mixture over the crumbs. Place in oven and cook until it barely flakes, 15 to 20 minutes depending on thickness.
