Simple and delicious cod recipe

Hi Folks-

Happy Monday! My first day back and I must say it was nice to be back at work. I did find that my half day was just about enough though :-). Back early in the am so maybe I’ll see you then. FYI the crew made sirloin chili yesterday so there should be some in the case, ask in the deli if you don’t see it!

I did manage to finally cook something last week and I’ll share it with you as it came out well and was simple.

From Mark Bittman Cod a La Vasca

4 to 6 servings

Approximately 2 pounds of cod

flour for dredging (although if you use corn starch the whole meal is gluten free)

1/4 cup olive oil

salt and pepper to taste

3 cloves garlic peeled and crushed

1/2 cup dry white wine

1/4 cup minced parsley

1/4 cup chopped scallions or shallots (I used shallots)

Preheat oven to 500. heat oil in oven proof skillet until hot. Coat top of cod with flour or corn starch and salt and pepper. Place coated side down in hot oil and cook til brown, about 4 minutes. Flip cod and add all the rest of the ingredients. Immediately put in the oven and cook until done (about 5 to 7 minutes). Cod is done when opaque and begins to separate. Don’t over cook. Serve immediately with rice.

This recipe is endlessly variable, you could add fresh herbs, chopped tomatoes, balsamic vinegar, olives, bread crumbs etc. Definitely a simple versatile way to cook cod!
