No pressure here!

Hi Folks-

With all the steam in the air a bit of steam has run out of my cooking. I like a hot weather dish as well as the next person but I just haven’t found anything lately that charmed or intrigued me (although I am going to try Melissa Clark’s creamy corn pasta dish soon, when the good corn is here, you can too, Sweet corn pasta). But still a certain ennui, so I started cruising the food sites. I found food tips (don’t wash your chicken it just spreads the surface bacteria everywhere, I knew this), don’t bother peeling garlic before putting it in the press (didn’t know this but it ups the charm of the garlic press for sure), you don’t need to sift except for angel food cake (stirring with a spoon and lightly scooping the flour totally works) and don’t de-seed cucumbers or tomatoes unless “seeds freak you out” (I never do, seeds don’t freak me out, but I didn’t know that two thirds of the flavor of both those are in the seeds).

One thing that does freak me out is pressure cookers but apparently there is a huge swath of the American public still out there using these things. It is one of very few kitchen tools/pans/equipment that I have never owned. Upon a little reflection I think this might relate to my mother blowing up a pressure cooker of rhubarb when I was quite small. We were all out of the room but the ceilings and walls were covered with hot sugary rhubarb and I distinctly remember the paleness of my mother’s face when she considered that we had just left the room and very well might have been in there.

If I find something inspiring to cook I’ll let you know, you do the same okay?
