Great Pantry Pasta

Hi Folks-

And Vermont comes roaring back for the winter win… Or at least she thinks so. I’m just going to call it sugaring snow and be totally fine with it.

We had a nice weekend, interrupted with a little work, which was fine, but I felt pretty antsy on Sunday afternoon and couldn’t quite place it. Finally I said to Peter, “You know what’s wrong with me? I haven’t cooked anything in seven days.” So I fixed that. We hadn’t planned so I made pantry pasta. I did have the roasted garlic and spinach raviolis from the store, so good start.

Part puttenesca, part I don’t know what, it was actually great. 3TBL olive oil, 4 large cloves garlic minced, 1/3 cup mixed olives finely chopped, 1/3 cup chopped fresh parsley, 2TBL capers, 1 tsp red pepper flakes, 1/2 a package of frozen chopped spinach, cooked and drained, 3 TBL Butter, 1 cup pasta water. (If I had anchovies or pine nuts I would have added them, will be beefing up my pantry)

Heat the olive oil and add garlic and pepper flakes for a moment, add spinach, olives, parsley and capers, heat adding a little more olive oil to keep things going, wait until almost dry add butter and cook until incorporated. At this point your pasta should be done, drain over a bowl, add pasta water to the spinach mixture, until you get the desired level of sauciness. Put the pasta in a bowl, spoon the sauce over it and sprinkle with cheese. Absolutely divine. And I won’t be going that long again without cooking, gets me testy.

The case is filled with wondrous thing (which I ate numerous times during the week) and Peter has great fish coming in tomorrow.
