Enjoying the moment!

Hi Folks-

I hope everyone enjoyed the spring like weather Friday, I know we did. We had folks over for dinner and spent a pleasant evening at least partially on the back porch, amazing really. I think the secret to surviving VT’s winters is to seize any glorious little moment that happens to pop by…50 degrees, entertain outdoors. Brilliantly sunny but frigid? Turn up the heat, strip down to your shorts, set a chair or two in front of the window, grab a friend, a couple of glasses of rose and have yourself a picnic. Cold, blustery and damp? Light all the candles in the house, braise something and be grateful for the walls and the general cosiness. That’s my plan anyway, so far so good!

We are getting mussels tomorrow. My favorite thing to do is to put a TBL of butter and a TBL of olive oil in a large pan (we usually do a couple pounds for the two us), heat and add 6 to 10 cloves peeled roughly chopped garlic, saute briefly and add bottle of inexpensive white wine and bring to a boil. Add the mussels and cover. Let cook for 3 to 5 minutes (when they are open they are done), Sprinkle with a handful of chopped parsley. Drain, reserving a cup or so of the wine. Serve with a cup of mussel wine liquor and a small amount of melted butter. Delicious.

To make a heartier version add a 14oz can of chopped tomatoes and if you wish, some green curry paste. If you opt for this, serve the mussels in individual bowls with the broth and serve a nice crusty bit of bread for mopping up the sauce. Mussels are pretty fantastic and excellent for mucking about with. Substitute coconut milk for the wine and go with the curry paste and tomatoes, a little lemon grass is good too.
