Easy Mexican Style chicken dinner

Hi Folks-

Okay Spring happened today, that was nice. Even if winter comes back, which it inevitably will, we are winning this year.

Made a delicious, crowd friendly dinner tonight in a snap. In a 2+ quart casserole pan put one cup of white rice, one can of rinsed black beans, one cup of frozen corn, one jar of salsa, one cup of chicken stock and the following seasoning: 1 tsp oregano, 1.5 tsp cayenne, 1/4 tsp pepper, 1/2 tsp salt. Mix well and put three raw chicken breasts on top (about 1.5 pounds total) cover with tin foil and cook at 350 for 60 minutes, take out uncover and coat with cheese, put back in the oven until cheese is melted. Done. Easy delicious and pretty nice left overs.
