A couple of easy summer recipes and the fish and menus for the week

Hi Folks-

Hope everyone had a splendid Fourth! We certainly did. Our family pork smoking master was at a wedding (so many weddings this fourth?!?) so I decided to try my hand at it. It was fun. I did a bunch of reading and figured out how to jury rig a smoker out of my gas grill, got up at 4:30 am and put on my dry brined pork butt and let her roll for about ten hours. It was fabulous. Was going for a Mexican feel to things so I also made salsa verde, which was okay, pico de gallo which was very good and my friend Alexis’ salad, which was so good I’m going to give you the recipe.

Also made grilled Mexican corn (grill husked corn until the kernels start to caramelize then start basting with a mixture of half sour cream, half mayonnaise and the seasonings of your choice) I used lots of garlic powder, some smokey paprika and the Mesa Rosa Chipotle powder from the store. Just keep basting (load that stuff on there) and turning the corn, two or three turns and you’re done, very tasty.

Super easy, delicious summer salad: One ripe mango medium dice, two ripe avocados medium dice, one English cucumber sliced in to half moons, one bunch of cilantro finely chopped, lemon and lime juice to taste and a touch of salt. That’s it. Chilled and served on a summer night it’s both gorgeous and delicious!
